- 4 lbs peaches washed and chopped (peeled, if desired)
- juice of 2 lemons
- 1 ½ cups granulated sugar

Add the chopped peaches, lemon juice and sugar to the inner pot.

Lock the lid and select Pressure Cook (high). Set the cook time for 4 minutes.

Allow pressure release naturally (NPR) for at least 15 minutes before quick releasing the rest of the pressure.

Press cancel to turn off the keep warm mode and select Saute (normal). Allow to simmer, stirring occasionally for 20 minutes or until the preserves reach your desired thickness.

Remove from the heat and allow to cool in the inner pot slightly before transferring into mason jars. Cool jars fully on the counter before covering and transferring to the fridge. These preserves will last for many weeks in the refrigerator but you can freeze them for even longer storage.
These preserves are made without pectin so they are on the thinner side as far as preserves go. We love to use them as a topping for pancakes, waffles or greek yogurt. Delicious!
