- 1 tbsp cooking oil (I use avocado oil)
- 2 lbs ground beef
- 1 medium onion, diced
- 2 4oz cans fire roasted diced green chilies
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp granulated onion
- 1 tsp granulated garlic
- 2 tsp Italian seasoning
- 1/2 tsp creole seasoning
- 1 tsp black pepper
- 2 tsp salt
- 3 cups beef broth
- 1 14oz can diced tomatoes
- 2 cups cooked and drained black beans (or 1 14 oz can, drained)
- 2 cups cooked and drained kidney beans (or 1 14 oz can, drained)
- diced avocado
- diced red onion
- chopped green onion
- chopped cilantro
- shredded cheddar cheese
- sour cream

Select Sauté (More) and add the oil to the inner pot. Once the pot is hot, add in the ground beef and sauté until the beef is no longer pink.

Add in the onions and sauté for 3 minutes more.

Add the green chilies, chili powder, cumin, garlic, onion, Italian seasoning, creole seasoning, black pepper and salt and sauté for 1 more minute.

Add in the broth and stir to combine.

Scatter the diced tomato over the top of the beef mixture but do not stir.

Lock the lid and set the steam release valve to the sealing position. Select Pressure Cook (High) and set the cook time to 10 minutes. (see the note below for stovetop instructions)

When the cook time is complete allow the pressure to release naturally for 15 minutes, then quick release any remaining pressure.

At this point the chili is keto-friendly. If you are saving out servings of keto-friendly chili, remove the desired amount from the pot now before adding in the beans.

Press Cancel to turn off the Keep Warm mode and Select Sauté (High/More).

Stir in the black and kidney beans and simmer until the beans are heated through, about 3 minutes.

Dish out the chili into bowls, top as desired and serve immediately. Enjoy!
Stovetop instructions: In a large stockpot saute the beef and onions on medium/high heat. After adding in the spices, broth and tomatoes, simmer on medium/low heat for 30 minutes.
This is a great recipe to make for a non-keto family while still being able to keep some of it keto-friendly for yourself! After cooking together all of the ingredients except the beans, reserve out a keto-friendly portion or two before adding in the beans for the rest of the family!
Thick ingredients like tomatoes and purees are known to scorch on the bottom of the Instant Pot and give a “burn” message. This recipe avoids that possibility by adding the tomato at the very end and not mixing it into the rest of the ingredients until the cook time is finished.
