- 148ml water
- 80g Egg white bread dry mix (see notes section for the recipe link)
- 1/4 cup (1oz) shredded mozzarella cheese
- 1 tbsp acacia fiber
- 1 tbsp whole egg powder OR 1 tsp egg yolk powder
- 2 tbsp (12g) butter powder
- 1/4 cup salted butter, melted
- 1 clove garlic, crushed or minced
- 1 tsp Italian seasoning
- 3/4 cup (3oz) shredded mozzarella cheese
- sprinkle grated parmesan cheese
- flake salt (to taste)
Prepare a large cookie sheet by spraying with cooking spray or lining with parchment paper and preheat your oven to 325 degrees.
Add the water and egg white bread dry mix to the bowl of your stand mixer.
In a small bowl mix together the acacia fiber, butter powder and the whole egg powder and set aside
Start the mixer with the whisk attachment on low speed. Gradually increase the speed until full. Mix on full speed for 5-10 minutes or until you get a texture similar to shaving cream.
Reduce speed to low and stir in the butter powder mixture and ¼ cup mozzarella cheese just until combined.
Spread the batter onto your prepared pan to about ¾ inch thickness.
Bake in the preheated oven for 8 minutes.
Meanwhile, mix together the butter, garlic and Italian seasoning and set aside
Once the 8 minutes of cook time is up, remove the pan from the oven and slice into breadstick shaped pieces.
Brush the garlic butter mixture evenly over the breadsticks and sprinkle with the ¾ cup of mozzarella cheese, parmesan cheese and flake salt.
Return the pan to the oven and bake for another 10 minutes.
Set your oven to broil and broil the top of the breadsticks just until browned as desired.
Remove from oven, allow to cool just long enough to handle and enjoy!
