Cranberry Pork Roast (Instant Pot)

Ingredients

  • 3-4 lb boneless pork shoulder roast cut into 2-4 pieces
  • salt & pepper
  • 1 tbsp cooking oil
  • 1/2 cup chopped onion
  • 2 cups homemade cranberry sauce or 1 15oz can whole berry, not jellied

Instructions

  1. Season the roast pieces with salt and pepper.

  2. Select Saute (high or more) and add the oil to the inner pot. When the oil is hot, sear the pork pieces on all sides. About 4 minutes per side.

  3. Lift roast and sprinkle chopped onion on the bottom of the IP liner. Arrange the pork pieces in a single layer over the onion.

  4. Spoon the cranberry sauce over the pork roast. Do not stir.

  5. Lock lid and set the steam release valve to the sealing position. Select Pressure Cook (high) and set the cook time for 35 minutes.

  6. Once the cook time is complete, allow the pressure to release naturally for 10 minutes before quick releasing the rest of the pressure.

  7. Remove the roast from the IP and set aside. Press Cancel.

  8. Select Saute (high or more) and allow the liquid to simmer until reduced by about one half.

  9. Return the roast to the pot and cover with the sauce. Serve hot and enjoy!

Recipe Notes

This dish goes wonderfully with rice or mashed potatoes and stuffing!
