Protein Breading Mix
- 12oz pork rind crumbs
- 3 cups (240g) egg white powder
- 6 tbsp (60g) unflavored gelatin powder
Mix all ingredients together thoroughly in a large bowl.
Transfer to an airtight pantry container and store in a cool, dry place.
You can add spices to your mix as desired. I prefer to keep the mix plain so I can add different spices depending on what I’m using it to bread.
